In the Kitchen

I love Sundays. Moreover, I love Sunday breakfast. I always feel like a little more effort should go into food on Sundays. It’s time spent in the kitchen with family. We have had a blustery weekend thus far. This morning the wind woke up Griff, who in turn, woke us up. After a long stretch and a few deep breaths, I got out of my nice warm bed and headed for the kitchen. Referencing my new favorite cookbook (as I mentioned in my yarn along), Paleo Comfort Foods, I quickly went to work, chopping, mixing and sauteing. The result was these yummy egg muffins!
These fantastically yummy egg muffins were accompanied by some sausage and an apple pear salad drizzled with 18 year old balsamic vinegar from Rocky Mountain Olive Oil (a great gift from my sister who lives out that way).
This recipe makes a dozen of these beautiful little egg muffins, so I repackaged them to have easy to serve breakfast for the week.
Ah, I love it when my week is organized.
