Friday night was greeted with a bag full of peppers from the neighbors garden.

This is just a picture of a few of them. I am working through my recipe keeper for all the pepper menu items I can find. I will probably cut up a bunch and put them in the freezer for later use.

Saturday caught me and my favorite Sous Chef working our magic with the mixer.

It makes me so proud to see how much he loves helping in the kitchen. He loves measuring things out and is now starting to help me read the recipes. We baked a loaf of Five Minute Wheat Bread for dipping in olive oil, garlic and rosemary later in the afternoon.

We also worked on a loaf of banana bread. Truth be told, this loaf came out terrible. After trying a few pieces, it went into the trash can. Oh well, can’t win all of them. Do you have a good banana bread recipe to share?

I really struggled with trying to find the perfect handmade gift for the men on my list this year. I thought something in a mason jar may be a cool way to go.

Have You Used Your Bread Machine Today?

Italian Herb Bread

1 and 1/4 cups water

1 and 1/2 tablespoons olive oil

1 tsp salt

3 and 1/2 cups bread flour

2 tsp sugar

1 tbsp dried parsley

1/4 cup grated Parmesan cheese

2 tsp dried onion flakes

1/2 tsp dried basil

1/2 tsp garlic powder

2 tsp active dry yeast

Add liquid ingredients to pan first.  Then add dry ingredients, with yeast last. Use your knuckle to make a whole in the dry ingredients to add yeast and keep it dry. Then close lid set to French setting and start. 3 hours later, you have yummy fresh Italian Herb Bread! Enjoy!

Every few months we have an “ode to Spikes Junkyard Dogs”. Spikes is an awesome hot dog joint in Providence that I use to visit frequently when I lived there. They have crazy hot dog combinations that are all SO yummy.

I didn’t have any hot dog buns and was too lazy to drag Griff to the store, so I threw some dough in the bread machine. When the dough was ready, I shaped them into small hot dog rolls. When they baked, they rose to the perfect size. We had the good hot dogs on home made buns, smothered with baked beans, mustard and onions. I can only eat one, barely, but Shaun downed two and was looking for more! They are the best!!!

I know, I know- processed food…but man, once in a while doesn’t hurt!

Pizza Dough for Pizza Night!

Oh Beans!

With the dreary weather and rain, rain, rain, I thought that it would be a perfect day to try my Mom’s bean soup. I think two years ago for Christmas, she had created these beautiful mason jars with pretty beans sealed in with some seasoning and instructions tagged to it. I had it in my pantry, but honestly forgot about it. Then we had it at her house last month, and I thought, I really need to try to get this bean soup going.

SO – today is the day.

Actually, it started last night. On the tag it says to soak beans overnight. I have never done this before- so I just filled the jar with water. Who knew I should have used a bowl! Of course, they expanded and when I woke up this morning, I had half hydrated beans all over my counter. This was my first of many mistakes.

I read the rest of the directions, brown up ground beef, add 3 cups of water and let it heat up. Given the state of the beans, I figure I better cook it all day. I added all the ingredients, except the tomato soup. I didn’t have any tomato soup! So V8 juice will do right? So I threw in some v8.

While my wonderful soup was cooking, I decided what better to go with soup than homemade bread. I hauled out my bread machine, grabbed the recipe book out of the cabinet and went to work. I was so proud of myself at this point…until, I hit start on the bread machine. I realized, I had read from the “Pizza Dough” recipe! DAMN.  Now what? Breadsticks??? I switched the bread back to dough and kept my fingers crossed.

A few hours later, I am back to the soup. Beans are still hard, and now it has no taste. Was it the V8 juice? Not enough sodium in it? I decided to add tomato sauce and beef bouillon in hopes to give it some taste. Now my toes are crossed.

The dough is ready. Have I ever made breadsticks before? NO. But pizza crust is really good. So I made them into bread shaped (sort of) sticks and put them in the oven.

They came out great, nice and golden. I melted butter with garlic (I am so glad they are friends!) and brushed it all over them. I figure, whatever I messed up in the recipe, I will make up for in butter!

Then it was time to taste test the soup and guess what? It’s not so bad. I think I saved it.

Moral of the Story:

When you can, follow the directions, when you can’t, add more butter.
