Summer Monster Pizza

In the warmer weather Friday Night Pizza Night needs a change. Sometimes the heavy red sauce and pepperoni isn’t as appealing to me. So this is how we mix it up a bit. I cheated last week and got store bought dough in the bakery of the market for $1.99.
I rolled it out, added pesto and feta. Instead of cooking it in the oven, we throw it on the grill.
It is super easy. Preheat the grill. Add flour to a pizza peel, place pizza on pizza peel. It will slip off onto the grill easier than you think. It takes about 15 to 20 mins to cook. I usually just wait until the bottom is golden (checking with the pizza peel).
Once it’s nice and golden, peel it off the bbq with the pizza peel. It always comes out crisp and bubbly.
I nicknamed this green dough of bubbly yumminess, “monster pizza” in an attempt to get Griffin to eat it. It didn’t work. Now he looks at it and says “Mommy, monster pizza, I don’t like monster pizza.” Oh well, more for me!

We had pizza last night and I tried to sneal a mushroom on his. He said same thing. I dont like that. Ok, here’s your cheese.

Oh my god that looks so delicious! I love pesto and feta! We don’t really change up our pizza all that much in the summer, it just depends on what ingredients we have in the kitchen. Sometimes it’s a buffalo chicken pizza, sometimes it’s hawaiian. Sometimes it’s just plain cheese (with pepperoni on Nate’s side).

I’m a huge fan of tabbouleh (sp?) in the summer, and now I have an alternate recipe, which is amazing! Instead of tomatoes, cukes, parsley and lemon juice, you put in summer squash, zucchini, red peppers, parsley and dill, and lime juice. The squash is raw, which is surprisingly good in texture and flavor. And of course, everything is better with feta!

I have a half bottle of that wine left over from the other night. Now you’ve inspired me to make some pizza. I just replenished my flour supply from Italy, my favourite for the perfect dough.
